I'm installing a Metalcloak rear diff cover and refilling. Should I replace the front diff fluid as well? 21k on a 23' Rubicon.

Yes. Why would you cheap out and skip it? I have a 2020 and changed it at three years, changed at the gear swap, 1000 miles at break in, and 5000 miles after that. 40000 miles total and I'm done for a while.
I think it was a bit too many changes for diff fluid, but necessary every time. Always looked good and the original gears looked great as well as the new set after break in.
Oil is cheap and it's easy to do. Once done, you know you're good for a long while...

I just replaced the fluid in front and rear for the first time. Currently have 42,000 miles.

yes, while you're putting your matching front diff cover on.
(unless you spend a lot of time in Reverse, the front is probably the one you're more likely to bash.)
