Worth getting the differential fluids changed? If so, when?

Do it yourself! It’s as easy as an oil change. When, you can go by the manufacturer recommendation but it’s also based on how you use your jeep. But again it’s super easy so don’t as often as you see fit
Not anymore, they eliminated the drain plug. However, a small pump can be used from the fill plug to remove MOST of the old fluid, a method I’ll be using since I got metal clock diff skids making cover removal more of a job. Had the fluid changed right before skid install at 15k miles.The stock covers have a fill and drain plug.

This is the way…Definitely a good idea. There is less fluid in these axles than previous generations so it is a good idea to change it out according to the service interval in the owners manual. And it's easier than doing an engine oil change.
It won't kill your diff to run the recommend 75w90. But it's better to run 75w140.
