What temperature is considered operating temperature?

For me operating temp is 212 ish. You need to burn off moisture and fuel in oil. That said most all of these platforms run between 200 and 220.

Is that the coolant temperature or the oil temperature?

Yes, cannot go wrong with 2,000 mile oil changes 🤩👍
Unless you have the 3.6 and have to roll the dice everytime anyone changes that oil filter - "is today the day it will crack?". Doing oil changes 5 times more frequently than recommended just increase your chances of cracking that 5 times as well.

Unless you have the 3.6 and have to roll the dice everytime anyone changes that oil filter - "is today the day it will crack?". Doing oil changes 5 times more frequently than recommended just increase your chances of cracking that 5 times as well.
Filter every other oil change

The trends, or averages, for my 2.0T, which I don't abuse:
Coolant: 195F
Oil: 197F
Transmission: 178F

Those figures will be higher, but not excessively so, when I'm towing a 1,400lb. trailer during the warmth of Summer.

Those are temps on my 3.6 these days. But are they considered operating temperature?

Taking it to the dealership for an oil change once, will increase your odds of getting a cracked Oil filter housing 10 fold.
