been shopping for weeks for tires and everything i want is on back order with no eta. So i am trying to chose between BF Goodrich K2O and Cooper Discoverer Stt pro.
I only off road on logging roads and side trails, nothing crazy.

Have you looked at the Copper discoverer ATX xlt ones? I started with one set, and after about 55K miles, I just got the second set. they performed well for me in dirt and mud FWIW.
That seems to be a common issue with lots of popular tires.
Recently put Mickey Thompson Baja Boss M/T tires on mine. Found 4 of them right away but had to wait 5 weeks on the fifth one. Going on the morning to get it.
Guy at the tire shop said it's been a common issue on many of the popular sizes in offroad tires.
Based on your stated use, I think the Coopers are more aggressive than necessary. BFG AT/KO2 are the best tire ever made, in the world, and maybe even other places.

Why would you get someone a case a beer for the wrong tires. Your stated use, and choices listed, indicate the BFG is the correct answer to which you should choose. Case of beer should go to the person that finds BFG in the size you want. Just saying.
Hey. The STT size you are wanting looks discontinued - so that may be the start of your problems. But STTs are fundamentally designed for off-road max traction. In wet, snow, and ice not so much. On-road not so much either.
As long as you are ok with the cons - get the STT if that look and void pattern is what you really want. But the all-terrain KO2s are a completely different tire. At this point you are kinda comparing apples to oranges.
A lot of all-terrain tires with 3PMSF would be better suited for FSRs and side trails and what not. That is what we use our KO2s for. Key is to air down to 15 and they will blast float over huge potholes and really deep washboard ruts. Plenty sufficient for that purpose. Relatively smooth and quiet on road with no hum.
In my opinion the STT Pros are excellent tires on road (in all conditions) and especially offroad. That's all I run on my Jeeps. But they are really loud on pavement (after about 15k miles). The KO2s run small. Everyone I know who has KM3s loves them. And no one has had issues getting them (at least here in VA). So maybe look at KM3s?
