I have a 2019 JLU 3.6 non e torque and 2021 JLUR 2.0 non e torque. Both have only had 85/86 octane since new. I live at 7000 ft and 90% of driving is over 5500 ft. Both Jeeps have been driven above 12000 ft and I haven't had any issues. Power and acceleration are both good. Maybe if I put higher octane in I would get more power, but I don't know if it would be enough to feel the difference. The turbo has awesome acceleration for passing at altitude, much better than the 3.6.

Seems in most fuels the MPG difference equates the price difference. Except when it comes to ethanol free. That stuff is expensive around here.

When the fuel system and ECU are designed for it, ethanol can be beneficial. I ran ethanol in my mustang with an e85 tune. The price difference came out to premium costs with reduced MPG but the low/mid horsepower gains are substantial. I also liked that the exhaust smelled like corn and the engine ran cooler. However, it wouldn't make sense in this hybrid system.
And it makes a much better Bloody Mary!

I ran a couple tanks of regular (87) this winter. I was testing it for myself. I had read that they recommend premium for efficiency in warmer weather, and towing. I have run premium since. My mileage suffered about 2mpg on 87 vs 91 and she felt a bit sluggish. Won't be running anything but premium again in my 2.0.

I have owned many high compression turbo vehicles in my life and none of them have ever recommended anything but premium fuel (91-93 octane). The 2.0T in the Wrangler is running 10:1, and while the engine can adjust and pull timing you may still be introducing knock, etc and limiting performance and efficiency. It just makes sense to me for a few dollars more a fill-up in a $50K vehicle to go premium.

The manual says 87. When mine arrives, it will only see 87 unless I head up to the mountains. The gain in "performance" to me is not worth the extra cost at the pump.

From what I've read, the issue only comes at higher boost levels out of the turbo. Normal driving / low boost, it is not that helpful.
Thank you @2manyhobbies . So many are stating that "the manual says use premium." Not mine. And optimal performance is not anything that you will feel seat of the pants. I've run 3 tanks back to back on premium and regular. No difference in fuel economy or seat of pants feel in performance.
