Wrangler Ac is automatic?

I sometime feel the fan blow air colder than air from Windows, is that because the AC kick in without I turn it on?

I know if I turn the Dial to the coldest on the mix air dial, the AC light and internal circulation light will be on, without having to press the little Ac button. But if leave the temperature somewhere cold, will the AC intermittently work?

Do you actually own a Jeep and, in particular, a 2018 or above Wrangler?

The automatic climate control will shift out of Auto mode the moment you manually start fiddling with the controls.

The way to adjust the temp is auto mode is by simply pressing the up/down arrows to set the desired temp.

Doesn't sound like the OP has auto controls. OP's post says "if I turn the Dial to the coldest on the mix air dial".

I have the manual A/C controls on my 2019, if I run the fan only and then turn it off before shutting the vehicle off, it will turn on the A/C automatically the next time I start the Jeep and turn the fan dial to any setting. Really annoying in the winter, but I'm used to it. We don't have much humidity here so I don't need the A/C to defog my windows, I imagine this was the intent. A little different than your issue, but it does seem to make some decisions on its own.

If you look at his other posts he sold a JLU soft top, I'm guessing he just forgot to update his profile.

Yes, mine is 2020 jlu sports with manual Ac. But I still feel sometime Ac maybe turn on without either me press the AC button or dial coldest in the air mix knob.
