Sorry about the late reply - I've been off the forum for awhile. The platform I built was designed to make the top of the tank flush with the seats, per my dog's request. ;-)
That's what I suspected. So, without the platform the water tank could almost touch the floor of the Jeep?

Almost, yes. It still gets high centered on the central tunnel, though, so it does need to be propped up a bit.

Nothing fancy, I use a 5 gallon water jug with a $10 manual pump. The jug is strapped to the roll bar. Takes up a lot of space, so may try the under chassis suggestions.
