Going against the grain a bit, since this is definitely not something a typical overlander would choose, I use a couple of these 2ga Stanley Adventure Jugs.

The reason I like them, versus some of the more traditional water jug options, is they are well insulated, the top locks down really nice and doesn't leak, and it keeps ice inside for days on end. And the faucet on it is pretty neat. I love having ice cold water on tap the whole trip.

My route was taking a 6gal walmart blue jerry can and adding a submersible 12v water pump. Hose comes through the cap w/ a watertight cable gland. 12v comes out the top w/ another watertight cable gland to a 10-ish foot cable. Added a cheap lawn hose nozzle. I have pressured water in the back of the jeep and if I need it near the jeep, or need room in the jeep while still needing water, I just move it out... up to 10 feet away.

if someone made a version that secured the rotopax between the roll bar and the window i'd buy it in a heartbeat!
I made my own version. But there's just not enough room in there for a rotopax QD mount. I had to make a custom mount.

Many thanks to @CaJLMetalHead for the inspiration and tank source.

I still haven't finished the installation with a good retaining mechanism and I'm just improvising a tiedown strap to keep ~40 lbs of tank from taking my head off in a frontal collision. But it's been on a dozen or so BOH trails from the Rubicon to Moab.

I bought this valve Amazon.com: Beduan Stainless 1/4" NPT Mini Ball Valve Male x Male Thread Shut-Off Valve : Industrial & Scientific

Then I machined one of the threaded ends to a hose nipple shape.

Then I took a piece of nylon and machined it to replicate the cap insert to allow the use of the original tank seal, but with enough thickness to thread with the 1/4" NPT pipe thread.

Hey all, I’m looking for water storage ideas for my camping trip that won’t break the bank. I normally camp in my Jeep on an air mattress with my girlfriend and a dog so space is a premium. I’m looking to store about 4-5 gallons.
Girlfriend, water .....Girlfriend , water...... hmmmm. I think water.

I use a 2 gallon rotopax, but just for washing hands and other non drinking necessities.
I bring drinking water separately, usually in my fridge.
I love that it has a spout, makes it very easy to wash hands or for washing dishes.

Besides the water rotopax we carry, we also store our camelbaks mounted to the seat back so we can drink while Off road. This is a cheap idea but requires the OEM fake Molle seat backs and Camelbaks with the d-rings at the top of the shoulder harness. We use Grimlocs on the seat backs and a couple of cheap carabiners on the Camelbaks. The Camelbak d-rings are perfectly spaced for you to remove the headrest and insert the headrest posts through the d-rings. A cheap hair tie on the plastic bracket the headrest post inserts into keeps the drink tube in place.
