rubbing i had with 35s was very lightly on the Lower Control Arms, and only at full lock.

i always ask to see and inspect what they're about to mount when i get tires.
i once found a shop was about to put on a tire that wasn't even highway approved. when i asked them about it their initial response was to suggest that i might sign a liability waiver,...!
Yeah, I think I’m getting a little rub at full lock somewhere. The sport bumper panels are gone, I’ll check the LCAs.

Picture below are the KO3s, they put the KO2s I ordered on this morning, looks the same but not KO3s.

hey, you know you’re going to want to get some adjustable LCAs anyway to add a little more Negative Caster, so maybe now you have a good excuse for a bent set something like these? šŸ˜„

So after DT put on the KO2's they aired them up to 35psi and were definitely crowning. After driving through a gravel parking lot and back onto pavement only the shoulders of the tires had sand still on them. I've dropped the pressure to 30psi and will chalk test them shortly. Does 30psi sound reasonable for 315 70r17 tires on the standard Rubicon wheels?

Sounds slightly high, but reasonable. I'd probably run around 26-27 PSI, personally. Lots of people like to keep them aired up high, but you don't need it because the tire volume is so large.

Remember that 315/70/17 is the same size as 35x12.5R17, and those are rated by the tire manufacturers to carry 1875 pounds per tire at only 25 PSI, even.

That being said.... I've done a few urban obstacles that I've previously done and the new tires perform much better than the stock Sport ATs. I barely feel curbs when I roll up onto them.

The other thing is 315/70/17 is really a very wide tire for the stock wheels. They will naturally crown just because 7.5" wheels are slightly too narrow for that tire. Put the same tire on a 8.5" wheel and it would be less crowned. So at some point you're going to have to live with a little crown and quicker wear -- endlessly dropping air pressure won't solve it.

The 315/70R17 is actually a hair smaller than the 35x12.5/17. The 315/70R17 is a 34.4 advertised diameter (usually 33.4" true rolling diameter) while the 35x12.5/17 is advertised as 34.5" with a rolling diameter of 33.5.

Sure, it's 1/10 of an inch difference and that's not much, but it's there.
