My jeep has an accutune 3.5 lift and 37 nitto muds. The steering is very numb/dead off center. It does not appear to have longer control arms. Would adjustable lowers front and rear fix the numb steering?

Yes. You need longer control arms. Adjustable will help dial it in perfectly.
Also if you feel bumps more you'll want the control arm relocation brackets.

Did you get adjustable track bars to recenter the axles?

It has an aftermarket brass colored track bar and i added a fox ats stabilizer but the steering correction on the interstate at 80 is exhausting

There are several different levels of Accutune Lifts. Do you know which one was installed? Their base lift doesn't include control arms but their Stage 2 and above adds adjustable lower front control arms.

Also high tire pressure can have a large impact on steering as well.

Honestly, get front and rear upper and lower adjustable control arms so you can get caster up front dialed in and the axle back exactly where it belongs.
They will also help get the rear aligned correctly too. You don't have to worry about caster in thee back but once again it's about getting the wheels pushed back to where they originally where. It seems to me the rear axle moves more noticably further forward after lifting.

NO!
When the caster is low, the steering response/sensitivity is high. More positive caster slows the steering response down. It's not a panacea for every steering fault.

If your steering has a dead spot in the middle, it isn't because the caster is low.
