I'm not sure how you can fix that.

Once you resolve that, maybe protect with Spigen. I previously used the Mopar screen protector, but that's just a flimsy plastic, someone here suggested Spigen, so I used it this time around, also easier to put on since it's rigid.

Ouch. Here is a link with various methods to try, but your scratch looks pretty deep. I don't know exactly how Jeep touchscreens are built, but I assume they are resistive and not capacitive. That likely means there is a very thin layer on top that is not glass, and therefore trickier to deal with.

Sometimes the toenail material transfers to the surface of what a dog scratches. You might try some rubbing compound on it. It will make a shiny area around where you rub, on the matte surface. But what have you got to lose?

At least, if you get it all one surface, you can put a screen protector on it.

If all else fails, a lot of times a screen protector will hide a scratch. The way they suck up to the screen makes a scratch almost invisible.
If it’s still working okay it’s worth a try and less expensive than replacing the screen.

You may have to replace the screen. My brother just replaced the one in his RAM because it started to delaminate.

Replacing the screen is tedious and not cheap, but isn't difficult. Replacing the entire radio is unnecessary.

The Connect screen has a anti glare coating on it. Many people wear through this leaving worn clear spots that won't go away. You can use Mequires Rubbing compound on a small foam pad to remove this coating and give you a clean display. I have done this for a number of my Jeep friends with great results.

Unfortunately for you I don't believe this will solve your problem, you might be able to make it much less noticable but I don't believe you will be able to remove the scratch completely, it looks really deep.

It won't hurt to try it considering the other option is a new screen at about $140. and about 1 hours of work.
