I'm aware oil pressure sounds go up some during high rpms, but I'm wondering if others are getting the same values. I idle at about 30, and it stays close to this until I hit the gas hard and go over 3k rpm. Then it jumps up to about 70. It goes back down to 30 when I let off the gas. It's basically either 30 or 70 depending on gear/rpm.

That's what mine does. It's normal for the oil pressure to go up when you put the engine under load.

A usual component in an engine is called an Oil Pressure Relief Valve. This valve will open when oil pressure reaches a certain level allowing oil pressure to drop and to maintain proper pressure range. I bet this is what you are seeing in action.
