Why do we swap out our u-joint axles for cv axles and then swap our cv driveshafts for u-joint driveshafts. There’s no consistency.

Yep. Factory rzeppa joints in the driveshaft are weak and don't handle significant angles. Double cardan ujoints, especially 1350 or bigger, are stronger and handle more angle. The factory joints are decent at reducing vibration. And they are probably cheaper.Axles - We swap these out to gain strength in high steering angles.
Driveshafts - We swap these out to gain droop/drop angle. Usually, these are upgraded to a larger 1350/1410 joint and are nearly always a double Cardan.
