As a data point for you, I have 3.5" Metalcloak GC lift and 37s. I'm running Jeep XR wheels and I get no rubbing on street or the trail. Whatever the backspacing of those wheels, might be a good target for you. I also don't like my tires to stock way out, either.
My rear XR rims started rubbing when I went to 30.5” shocks and minimal bump. -12 offset fixed it by about 1/4”.

Good point. I'm running Falcon shocks, which are around a 28.5" (if memory serves me) extension, instead of the Rocksport or 6pak shocks.

I didn’t have near the interference issues when mine were 28.5”, same bump stop.
