Patagonia 40” x 17 M/T-02’s, 34 psi (at 65 degrees) and they rise to about 36 psi (at 90 degrees) are the quietest tire in that size I have ever owned. You really need to adjust the pressure to match your weight. There are colored lines on each side of the tread and you need to adjust pressure so the scrub marks stay on the lines. I will be buying these again when we wear them out.

I'm running Yoko G003 37's. They are quite quiet, but are also quite new. Will see how they are with more miles, but from a noise perspective, they are as advertised at this point.

Nitto Ridge Grapplers are the best I've found for noise/traction/wear

Yep, there is no quiet MT.. maybe for the first 10k but then you'll be rotating every 3k miles and eventually that won't even work.
