Has anyone done oem oil separator “4893609-AD” on their own? I can’t seem to find much on it or any pictures. I know it’s a 10-12 hour job from what I’ve read.

Not done it myself, but I can see why it's a big job. You have to remove the intake manifold to get to the oil separator. Problem is, the intake manifold houses the intercooler, EGR, and some evap stuff too and therefore has a bunch of plumbing running through it. The manifold removal looks like the bulk of the work, with some variation depending on if you've got eTorque or not, which may require pulling the passenger fender to access stuff on the side of the block.

Yup, separator procedure is pretty brief, but the "remove intake" step is actually a 36 step procedure.

Alldata shows the book time for R&R manifold at 4.4 hours, though.
