Jeep Ecodiesel coolant temperature

Can anyone share technical documentation for what the coolant temperature should be under normal operating conditions? I watched a video where they were towing with a brand new Gladiator and the poster felt that 220 was at the top of where it should be. I have a brand new 2022 Wrangler and noticed the temp got to 206 just loafing on a short trip on the freeway. So, what is normal; when is it time for concern?

Coolant temps don’t seem to be much of an issue with these when towing properly. It’s oil temps that have some concerned.

My average oil temp i believe is 200degrees? or 100 degrees but its stayed the same hasnt gone up or down since the day i bought my car with 10 miles 3 years ago
