I'm in the same boat. Looking for solutions. Did you get it to work? Any pictures?
I ended up using the 'lock and roll' solution that I listed here in the thread. The hitch on the jeep part is just a straight tube that slides into the jeep. There's no lift on that end. On the trailer side, I used a drop to get it aligned.

I'm not sure on your boat trailer if you can swap out what gets inserted into the trailer tongue. On mine you could. On my stock rubicon with the 33" tires it fits fine without any rubbing. I can also get the trailer on and off without any issues.

Below are pictures on the trailer side. If you want to wait, I have a trip coming up in a couple of weeks that I can get a picture of it on the jeep.

Thanks! Yes, it would be great to see it in action.

How is the access for the rear door? Does the drop-hitch hang up on obstacles?

My trailer has the DO35 and one down side is that according to the installation instructions it should only be mounted on top, right side up, and since it sits on top of the frame vs. inside the frame it raises the trailer hitch receiver about 3-4 inches. If I get a ball mount with the riser, I end up with all the issues you mentioned above: tire interference, limited access to cargo area through rear door, potential down-grade of hitch capacity rating, possible increased torque on hitch/Jeep frame etc.

What I tried is flipping the DO35, in effect causing a drop hitch trailer side. That seems to work however I sent an email to the manufacturer to get clarification on this mounting install. To me, the only negative I see is potential exposure to trail damage in extreme articulations.

Mine looks similar to your second picture. The rear tailgate opens until it hits either the handbrake or emergency brake disconnect box on top of the tongue. If I'm on an incline, depending how it is, the rear door may not open a lot. I would say it's enough room to open the door two or so feet; just enough to open and grab something.

I've never had the hitch hang up on anything, but I have not tested it on any extreme trails. For forest roads it's fine.

I'm going out labor day weekend for a trip and will post pictures after that. It's really going to get a test as I'll be driving down to a beach area. I'll take pics and post when I get back.

Attached is a picture of what my setup looks like. This past weekend trip was a pretty good test, as it was up and down sand and bumping all over the trail. The roads were just wide enough for one jeep and had numerous large roots across it. My trailer weighs probably about 2k to 3k and I actually got stuck going through soft sand uphill.

No issues with the hitch and it performed flawlessly.
