I noticed this.. On my windshield behind the rear view mirror, is this a camera that hasn't been hooked up from the factory?

What vehicle? OEM and Z automotive front cameras are in the front grill. Not sure why the forum is putting photos in a collage format. Maybe try one good photo and more info, Someone here will be able to help

Do you have the active cruise control option on your Jeep? If so, it has a forward-looking camera behind the rearview mirror looking out through the windshield, any chance that's what you're talking about?

I solved the jigsaw puzzle! And yeah that's definitely the ACC camera

That is the ACC agreed. I've noticed in winter when the defrost remote start is on it's the first area to clear @ top of the window. Weird.
