On my ‘23 Rubicon I’m unable to fully turn off the floor lighting without the speedometer lighting going super dim. I know there is the control to the left of the steering wheel that adjusts this: spin it down and floor lights go off but speedometer lights get dim. Spin it up and the speedometer lights get brighter but floor lights turn on? I had a 2020 altitude sport and did not have this problem. Please help!!!

I had a 2020 altitude sport and did not have this problem. Please help!!!
Unfortunately there is nothing you can do, other than disconnecting the floor lights. For the later JL model years, Jeep/FCA/Stellantis eliminated the 2nd dial that controls the ambient lighting.

There should be an option in the uConnect settings to disable "interior ambient lighting".

Not exactly convenient, if you need to turn them on/off all the time, but it should work for turning off the footwell and cupholder lighting.

uConnect Settings > Lights > Interior Ambient Lights
