Why can I find a single or double bench seat anywhere for a 2019 Wrangler JL? I want to remove backseat and replace with either a single or double, completely foldable simple benchseat . I can't find any.

I think you're looking for something that doesn't exist yet. Time to get full custom and make your own folding bench seat.
