Good morning - is there a good thread for amplifier install? I have replaces all speakers at this point, but looking to bypass the Alpine amp and add one of my own. I see many articles on setting up PAC Ampro and getting signal to the new amp, but not clear on if there is a plug and play option for the speaker wiring, or do I just run new wire or splice into existing wire? Also, with the eight speakers, do I need to have two amps to power all channels individually?

It depends on what speakers you used, and if you want to maintain the stock crossover setup. In the stock alpine, the dash speakers are almost full range (they aren't tweeters), the knees are mid bass, and the subs are lows.

In order to accomplish the same distribution, you'd likely need to actively cross over the signal with separate (or enough channels) amps. If you are going to run the dash speakers as tweeters, it'd be easy to just run standard passive component crossovers.

I've used an AmpPro for a full wholesale replacement of a system where I used a processor, all new drivers and adding a sub. I felt like it's one of the better options for an OEM interface, but it all depends on what you want, who is doing the install, and how much effort you want to put into the project. I used all new wiring for the speaker, but I did interface with the OEM wiring for the soundbar to make it easily removeable.

You can also use a Rockford DSR-1. Pull the plug out of the Alpine amp and plug it into the DSR and you could use the speaker wires out of the amp and not have to run more wires. Dean a Five Star car audio has in install in a Ram using one and replacing a factory amp and shows how to figure out what color goes where.
