I'm running 35's. Rear fully flexed they ALMOST rub but just barely miss.

35's...and what? 35/12.5 R17? I'm thinking of going with an 18" rim and putting on 325/65/18

The Rubicon has 285/70R17 tires stock. These are 17" rims and just shy of a 33" tire (33.7x11.2).

You meant 32.7 - right?
