Our JKUR had the soft top. I don't think there's much, if any, difference in the open air feeling between that and our current one touch. The "roll bar" and soft top rails take up about the same real estate on either.
So far (5k miles) we've not suffered from the squeaking or rattles others have reported. I do prefer the hinged glass for easy access to the rear not to mention the maintenance issues inherant with the soft plastic windows.
If my budget dictated a full rag top I'd not hesitate but I really like our one touch. It's open much more often than our soft top ever was.
