Honestly you don't even have to be after a fill-up on a downhill, I see this all the time on the same dash screen. My JLWSD will randomly do this while driving. I was on the highway the other day doing 60 on a straight path, no incline and it said 99.9mpg for like 2 seconds before switching back to 26mpg. I was like, "Diesels Rock!!" ??
It happened again yesterday taking off from a stop light, said 88mpg, I was like "DAAAAAMN" ??

Put the Vape pen down and place your hands at 10 and 2 my friend. Ha Ha. This just like mine it was at 5999 and I was watching turn to 6000 and when it started to turn it (I kid you, not my wife was watching) back to 5988. WTF Ghosts in the machine..

Pretty easy to replicate. Get up to a fairly high speed on a non busy highway and then let off the throttle. Coast for as long as you care to. Not necessary to drop into neutral. Very soon thereafter reset the mpg 'lie-o-meter. When coasting down from a high rate of speed, this condition can easily result in over a hundred miles per gallon.

For some background, fuel is injected into each cylinder by a specific injector pulsewidth duration where the injector is physically opened (squirting gas) which is primarily dependent on throttle position. The length of time of this pulse of fuel is also based on available air in order to achieve something called 'Stochiometric Ratio', which in turn determines an appropriate combustion mixture for the spark timing required for proper detonation. All three of these variables (fuel, air and spark) must be applied in the correct amounts at the proper time within the piston's location within the cylinder to produce power as measured in torque, or it's overall crankshaft angular (rotational) energy.

However, based on the fuel pump's average pressure, a rate of fuel used per each cylinder's combustion event can be calculated. Furthermore, at the engine's current rotational speed (RPM) a distance of travel can be determined generally based upon the vehicle's calibrated tire diameter and overall accumulated gear ratios (differential and transfer case gearing as well as current transmission gear selection). With all this, a delta distance is used over some calibrated number of combustion events.

Unfortunately the cluster's EVIC display can only display 3 numeric digits so this calculated amount of fuel consumed over this delta distance can not be entirely indicated accurately. The displayed value has an upper ceiling of '99.9' mpg.

So it's very easy to replicate. No big deal. Hopefully with some background information you can better understand why.
