Mine also drops when at 95%, and goes down to around 16%. Looks like highway driving only slows the buildup. Never seen a decrease in soot percent while passive regen is active.
I went on a trip to France and on the highway on the parts where there were a lot of long hills the soot percentage dropped when driving uphill. There I was driving 135-140 km/h, the percentage dropped the fastest when it shifted to 7th gear. It never holds 8th gear well when driving uphill on highways or when it is windy.

I always check the regeneration status using the Car Scanner app (this type of engine requires a lot of attention). When it reaches 100%, it starts regenerating. I've attached a screenshot of the app, which is also compatible with CarPlay.

Furthermore, if you see that it reaches 100% and activates mode 2 (i.e. active regeneration) do a few more kilometers (or miles in material) and you will see that it will return to 16%.

Whey do you say this engine requires a lot of attention? What problem you have had so far?

Do you know how high the oil temp was on those hills?

Yes
It was around 109-111 degrees Celcius. Downhill it dropped to around 95-98 dregrees Celsius
