40 minutes of driving on the highway, 50-70 mph, 48 degrees outside. 3.6L, 8 speed, 4.88 and 37s. And 0w30 oil.

I don’t have a lot of experience but what I have they look normal. I have 3.6 with 315’s and stock 3.45 gears and run about that. If it gets warmer and I’m in traffic I can see my trans get into the upper 190’s and oil get into the low 200’s…wigs me out

Yeah my trans temp get higher than that and makes me nervous. And I can't do anything about it ☹ I can use my Tazer to turn the fan on to cool the engine oil and coolant

Looks good. It's ok for engine oil temp to get over 212 degrees to boil off any condensation.

Nothing wrong with ATF temps in the 200's; very common during towing and/or the summer heat.

150-250F or so is perfectly acceptable for a normal usage range with modern synthetics, even 270F during prolonged heavy usage. Our Grand Cherokee (same 3.6L + 8HP50 trans as our JL) runs similar temps, as they were both engineered to operate within similar parameters.

The 9-speed auto in the Cherokee KL runs about 50F cooler even though it uses the same Mopar 8/9-speed ATF. The KL's 3.2L Pentastar operates in the same 190-210F normal engine temp range.

Probably. However it's far more dangerous in the event that's it's used as more than a decoration by the vast majority of folks who have them.
What other kind of Jack I could carry with me? Storage is so limited in my little two-door
