Other than fluid levels and tire pressure, is there a more comprehensive list of things to check while preparing for an overland trip: what bolts to torque to what spec, what else needs to be inspected to get ready? One page PDF somewhere?

Retired from Corrections....I have stories.
I check the torque of all suspension and steering components. I check the brake pads for wear, I conditions of the winch rope and tension the rope, I check the conditions of soft shackles, and recovery gear in general. I give the Jeep a full over inspection looking for loose bolts, worn parts. Then address as needed. If it is a real long trip like multi month trip. After I am done with my inspection, I take it to my local Jeep shop and have then do an inspection to see if there is anything I missed. I pay them for an hour of labor and they put it on a lift, and check for problems and hook it to the computer and run diagnostics.

If you go to the effort of checking your suspension bolts for torque you should mark them with a paint marker so you can visually inspect them later.

Most checklists I’ve seen are about safety.. on that note, check your fire extinguisher.

It depends on how thorough you want to be.
Northridge published a list some time back:
