RaspberryPi Touchscreen Tablet Setup - looking for 75mm vesa mount

I want to mount a raspberry pi touchscreen in the jeep, and one way i think would work great is a 75mm vesa mount that i can attach either to the dash or the grab handle on the passenger side. I can't seem to find anything that would work, however. Has anyone made one or purchased one?

I'm going to put a raspberry pi 4 on it (about 50 bucks) and a 7" touchscreen. I'll run raspberry piOS for a simple touchscreen system and media player in the car, along with a game emulator (RetroPie) so the passenger can entertain herself during 7 hour ski trips
