2019 JL Sport and a bunch of Fords
I have a 2019 JL Sport with the base radio (5" screen ) with a generally non-functional back-up camera. When it's within a couple degrees in either direction of freezing the camera works. Generally though, I get a gray screen with the message"camera not available " on it. I assume it's the camera, but don't want to buy one if there's a known issue with this happening and it's something else.

From your description it sounds like you might have either a loose or faulty connector connection or a wire that is pinched/partially broken but makes connection when the cold causes a position change in regard to that problematic wire. Cold can also impact a connector that is not seated properly, etc..

Anyway, I have repaired 2 JL's that were doing similar.. With one I found a pinched/partially broken wire on the exterior rear. The other JL..... all it was was the connector that resides in the tailgate had worked itself partially loose and would cause issues with temp changes..

Easy to pop off (use plastic pry tool) the inner tailgate panel and check the connector there. Seek out the connector and disconnect and reconnect it a couple of times and then the final time take care that it lets say locks in place... See pic below that displays b/u camera connection.

Also eyeball/look over closely, all wires coming out of area where actual camera resides on rear of the JL. Any wires pinched, etc...

Back of the panel has about 15 plastic retaining clips. Ignore the open holes in the pic as a small trim sub panel was removed. As @Rhinebeck01 said this is a quick and easy job. Pop the panel off somewhere it’s easy to find any clips that try to escape.

Panel comes off easily... but be careful, .... go slow and easy..... when you remove that black panel on the inside of the tail gate. It is really easy to have one of the green retaining clips fall into the hole that holds the clip on the tail gate itself. The green clips can be hard to buy/find..

Part number for the green clip is Mopar 0651 1829 AA (they cost about $.66 each)

These green clips come in packs of 5 and part # for the 5 pack, is Mopar 0651 1829 AA - 005
