this isn’t really a question. I know it’s been beat to death just an observation.

It seems that AEV on their JL 370 package list the upgrade as 37 inch BFG‘s with 456 gears

Now coming from a reputable company like that I think that probably answers a lot of questions

Yep.

The "correct" ratio depends on a bunch of variables. Engine, transmission, expected use on road, expected use off road, what altitude the Jeep will live at, and a lot more.

One shop making one choice doesn't really affect any of that.

I run factory 4.56 XR gears with 37s. It does just fine offroad and works well as a daily driver. Is it optimal, not really. I think 4.88 with 37s would be equivalent to 35s and 4.56 gears the XR came with.

RE-gearing will just get you to the next gear quicker. With that there are probably benefits in climbing and perhaps MPG but for me, there was little to no difference in acceleration and 0-60 time between 4.10 and 4.88 with 37" tires:
