Is there an option, or could such be added, to extended the number of post viewable per page?
It would make catching up on old, long, post much easier.

I concur!

I don’t know if this forum software supports it, but ability to click on a previously viewed thread and be taken to the first unread post rather than the first or last post of the thread would be great too if possible.

This happens by default. When I click on the title of a thread I've previously read, it takes me to the first unread post for me. When you place your cursor over a thread you've already read, does the URL end in "/unread" ? If it does, that's supposed to take you to your first unread post when you click on it. It does for me.

Perhaps the issue is that I access the forum on a mobile device. If I click the thread title, I’m taken to the last post. If I click the date he thread was originally posted, I’m taken to the first post of the thread. If I click the time of the last post, obviously I’m taken to that.

When I'm on my phone, clicking on thread title of a thread I've read before takes me to the first unread post that thread.

Do this -- hold your finger over a thread title to show the link URL. Does doing this on any threads you've read previously show you a link with a "/unread" at the end of it?

For example, the "Molle First Aid and Survival bags/kits" thread link for me on my phone is: "https://www.jlwranglerforums.com/forum/threads/molle-first-aid-and-survival-bags-kits.10015/unread" and clicking on it takes me directly to my first unread post in the thread.
