I torque until the bolt breaks. Then I put in a new bolt and torque it less.

Your doing it all wrong. Torque it until it starts to feel looser, then stop. Done.

One thing of note. It's recommended to use a breaker bar for the degrees, not the torque wrench. It doesn't take much added torque beyond the click, to throw the calibration off enough to cause issues down the road. Like snapping a bolt before the torque wrench knew to click.
