Any way to do a matte black and different color stitching?

Hey Nik, I do offer many different thread colors. Red is probably the most popular to match the Rubi's interior stitching, but I have done them in green, silver, black etc. As far as a matte finish, the leather is pretty much what it is as you do have to buff the leather to remove any residue from the dye. I do use a matte acrylic sealer made by Angelus on them as other acrylic sealers (to me) are too glossy and some are even almost plastic like.
