Things just don’t turn out...like pies/breads/cakes, the outside is done/brown but the center is not done, I’m sure it’s a temperature thing....

Maybe your oven runs cold. Some oven thermostats, especially if the oven is on the lower end of the appliance spectrum, are off by as much as 50 degrees in some cases.

Use a toothpick to test the doneness of your pies/cakes. If a toothpick in the middle comes out clean, it's done. Otherwise, some residual will be left on the end. Keep baking until done.

Alternatively, increase the set temperature by 15-25 degrees & monitor closely.
