The story behind "why" is long and complicated. The issue is "can."

is it possible to remove a one-touch power top (2023 JL Rubicon) and install a Mopar soft top. Removing the one-touch seems clearly established. Coming back with the Mopar soft top to replace it, unsure. Is this possible. Thank you.

If you purchase the soft top with hardware, I don't see why not. All of the hardware holes are there no matter what top they put on the Jeep at the factory.

You can do it. I do it every year, I remove the SOT and install a softtop for late spring until the “blowing dirt” season starts here in the southwest. You will need the “Targa brackets” for the softtop to latch to at the front, everything else will be in a softtop kit, whichever you get.

Now installing the brackets is going to involve replacing the windshield moulding or trimming your current one to allow the top to latch to them. You will also have to remove the “striker brackets” for the SOT, not a big deal just one 10mm nut on each of the two brackets.
