I may not get this exactly correct, and may not know what your looking for, however
Vincent cut off an ear, and those are most likely left/right audio cables,
Beethoven couldn't hear at all/or was tone deaf, that audio cable combined both sides,
Stevie can't hear, and those are video inputs.

Close but no cigar. First one is video and right channel only, no left.
Second one is video only, no audio.
Last one is audio only, no video. Stevie is blind, not deaf.
