I mean.... its a good volume of food, doesn't require much effort, quick. And if Tom from accounting sneers at you for not making your Grandmothers Green Bean Casserole then he can go jump in the lake... should be very survivable in the weather you're having. lol

I am interested in this Chocolate Chili though... don't hold back.
I had planned on PM-ing it, but screw it, you should all enjoy it:

Chocolate Chili (serves 6-8)

Ingredients
-2 tablespoons coconut oil
-2 medium onions, diced (about 2 cups)
-4 cloves garlic, minced (about 4 teaspoons)
-2 lbs ground beef (get lean beef, since you won't have a chance to drain the fat)
-1 teaspoon dried oregano
-2 tablespoons chili powder
(Chris' addition - 1-2 teaspoons of paprika, & some cayenne pepper or red pepper flakes to add a kick)
-2 tablespoons ground cumin
-1 1/2 tablespoons unsweetened cocoa
-1 teaspoon allspice
-1 teaspoon salt
-1 can (6 oz) tomato paste
-1 can (14.5 ounces) fire-roasted, chopped tomatoes (Hunts is the only brand I've seen with these)
-1 can (14.5 ounces) beef broth
(Chris' addition - 1 can (15 ounces) of red kidney beans, with or without 'juice' - good to have the juice if you crock it...)
-1 cup of water

Directions (original method, on stove)
1) Heat a large, deep pot over medium-high heat, then add coconut oil. When the oil is melted, add onions, stir with a wooden spoon and cook until they're translucent, about 7 minutes. Add the garlic and as soon as it's fragrant, about 30 seconds, crumble the ground meat into the pan with your hands, mixing with the wooden spoon to combine. Continue to cook the meat, stirring often, until it's no longer pink.

2) In a small bowl, crush the oregano leaves between your palms to release its flavor, then add the chili powder, cumin, cocoa, allspice, and salt (and paprika/pepper if you want). Combine with a fork, then add to the pot, stirring like you mean it. Add tomato paste and stir until combined, about 2 minutes.

3) Add the tomatoes with their juice, beef broth, and water to the pot. Stir well. Bring to a boil, then reduce the heat so the chili enjoys a gentle simmer. Simmer for at least 2 hours. Do not skimp on the simmer!

Crock Pot Method (by Chris)
1) Use a nice frying pan/skillet - I use my 12" cast iron one. Use coconut oil to grease/coat the pan. Brown the beef first (maybe season with salt/pepper?). While browning, cut the beef into little pieces. Place browned meat in bottom of crock pot.

2) Lightly brown the onions in the beef drippings. Add the garlic a little later on, so that it and the onions finish at the same time. Add onions & garlic to crock pot.

3) Combine spices & salt as directed above, then add to crock pot. Sir things together.

4) Add tomato paste to crock pot. Stir again to combine.

5) Add remaining ingredients to crock pot and stir well.

6) Crock on high for 5 hours or so...longer won't hurt (though it might start to blacken around the edges - keep an eye on it)


Serve with fresh spinach, olives, cheese, radishes, and sour cream? Cornbread wouldn't be bad either. Make a bed of spinach leaves in your bowl and put the chili on top.
