Thinking about doing this as I’m on a budget + don’t want to go full lift kit until after I’m out of warranty (not interested in the Mopar Kit).

I have a Sport S. Would adding 35s and a leveling kit void any part of my warranty?

Modifications don't void your warranty. However, if one of your aftermarket components results in failure of an OEM component, dealerships can simply void the warranty of that particular part. A lot of it is at the discretion of the dealership, too. Some won't bat an eye at your Jeep if you bring it in and it's a total Frankenstein while others will throw a fit if you so much as have a scratch on a control arm.

Won't matter after 36,000 miles anyway. Do what you want.
