Hi everyone I’m a new Jeep owner and would like to know what’s the thickest and biggest tires I can get without getting a lift on a 2020 Sahara unlimited JL 4 door?

That depends on what you plan to do with it. Do you need full wheel articulation? How much tire rub is acceptable when turning? Does your state care if the tires extend beyond the fenders? Etc.

There's an answer that also limits you on size and that is gearing. The biggest with a stock Sahara is really 33". The 3.45 gearing is not conducive for larger. 33s also shouldn't give you any fits for most all driving conditions. You could probably on road with 35s and only need to perhaps do some minor trimming but performance may suffer due to gearing.

I have an Unlimited Sport. I've believe your Sahara has 18" wheels. Mine came off a Sahara (18s) and have Falken tires. 32.6" OD actual per their data sheet. They only slightly rub at extreme articulation and bump. 3.45 gears were horrible, I changed to 4.10s. Gas mileage is 19-23 MPG depending..... 3.6 engine/auto.

285/75/17 will fit on sport suspension. (sahara)

If you want to keep your 20" baller rims, I don't know.

Plan on a solution to adjust the tire size in the computer- be it your dealership, jscan, or something else.
