Thanks, Tomas. I have driven part of Bee Canyon in my CJ-5 and enjoyed it very much, but it can get super busy, especially when the area is open for shooting. Better to go there in the hotter/drier months when shooting is prohibited because of fire danger. The list you provided is a great start, and I'll check out some of those trails. I also know that there's plenty to see around Anza Borrego, such as the mud caves, Shell Highway, and Clark dry lake bed, but I haven't been yet. Hell...I don't even have my new Jeep yet! Hope to see you on the trail some time, and appreciate the great tips.
Anytime! Anza Borrego and Valley of the Moon are great places for camping as well. I will make it out there in next couple of weeks before the summer weather comes!

Hey Jeff, welcome! I am relatively new to the area as well. Below are some easy and moderate trails I have done and/or was recommended. I haven't done all of them. Maybe some experienced southern california locals can jump in here and make some recommendations as well.

Easy:
Otay Mountain Truck Trail
Thomas Mountain Road
Black Mountain Truck Trail
Santiago Peak
Bee Canyon Truck Trail

Moderate:
Cleghorn Ridge Truck Trail
Cooper Canyon/Sleepy Hallow
Heartbreak Ridge

I'm in Temecula and looking for some cool trails a noob can take in a stock Rubi.

Great day in the Apache National forest, took the Mountain bike out for some XC riding. Had to do some flex checks on the stock setup and get a good feel for how it performed. I finally ordered a lift and wheels/tires for it. I

Took the top off to install my Hothead Headliners and played in the sun. Also played around at the Bonneville Salt Flats today.

Great looking Rubicon. Was the installation of the hotheads difficult? I looking at doing it for my Sting Gray 4Xe Rubicon when I get it.

Great looking Rubicon. Was the installation of the hotheads difficult? I looking at doing it for my Sting Gray 4Xe Rubicon when I get it.
They indicate you can do without taking off the top, however I found that the middle pieces would have been hard to do with the roll bar right there. Doing it on a flat surface took me about 30 minutes.
