I agree. Have a sahara with LSD and it drives great in the winter in snow and ice on 37s.

Heck of a lot better than the rwd one wheel wonder cars I had growing up. No need for sandbags anymore

Which of these two would be preferred for snow/winter driving?

Willys Diesel with LSD and KO2s (285/70/17) replacing the MTs
or
Willys XR with Selec-Trac and LSD (but has wider 35 KO2s)

The latter, for no other reason than the Selec-Trac allows you to leave 4WD engaged full-time.

But my guess is they will be close. The LSD is the single biggest help in these setups, and it is present in both.

With regards to tires: the narrower tire ought to work better in 1-6 inches of snow, where maintaining contact with the road is key; the wider tire in 6+ inches, where floatation starts to come into play.

PS - I found out that Selec-Trac works well in full-time mode as long as the tires maintain contact with the road. As conditions deteriorate, it is best to engage it into part-time mode to avoid overheating the clutch packs.
