My Patagonia’s are very quiet so far but wear and time will tell.

Patagonia 37’s run them at 36 psi to keep them crowned in the middle. 15k miles on them about 1/2 gone and still only noise is after reinflate from 15psi for the first 15 minutes.

I am running Toyo Open Country MT 35x12.5R17 and find they are not quiet. But I also don’t care how loud they are so it never bothered me.
The Load Range C's are superb.

Patagonia mt’s are by far the quietest set of mts I’ve ran. But they do need to be aired up higher than most people like. I tend to run mine at 37-38psi. Their manufactured to run on the center tread on the highway. The compound on the center treads a harder compound to make the tire last longer and run quieter.

I just went from 315/70r17 BFG KO2 to 37x12.5x17 Mickey Thompson Baja Boss M/T. Used a decibel meter app and the old tires were 63-64db, the new ones were 64-65db, both at 70mph. The new ones were a little lower frequency too. Very pleased with how little noise they added.

I’ve always heard good things about Patagonias but I have to say I’m very happy with the lack of sound from our Falken Wildpeak MTs. The noise they do make just becomes background noise and we don’t notice anymore. Heck, the 2.0L 4banger is louder than our tires. It makes me wish we has bought stayed with the Pentastar V6.

BFG and Falken I have ran both and both were quiet for a mud tire. Not much different than their ATs.
Can also vouch for BFGs.

I’ve read the Yokohama M/T G003’s might be the quietest true M/T.
I almost bought those but decided to go Cooper STT Pro’s, which are definitely NOT the quietest. But around town it doesn’t bother me and on the highway the wind noise with my sunrider drowns it out anyway🤷‍♂️. Food for thought.
