What do y’all do for meals on the trail? I’m considering a mini kitchen setup for some simple meal prep, something more than gas station sandwiches. Start the ride around 0700 with eggs and hash out the back of the jeep kind of stuff. Just getting ideas right now.

Retired from Corrections....I have stories.
We eat great on the trail. We have a fridge full of food and depending on the trip, we carry a Skottle grill, or a two burner Coleman stove with a grille topper, or a jetfuel stove. It depends more on how long we are going to be out and how many people are with us. We eat like kings. Sometimes if the group is big enough we carry a Blackstone grill.

We don’t eat as great as Wibornz. That looks awesome. We don’t have fridge on board so space is limited in our 2dr. I love eggs in the AM. We crack and pour eggs into plastic water bottles. Easier to store in cooler and take up less space. Just shake them open and pour out what you want to scramble. Works great.
Dinner we often will just use prepared camp meals. Easy and again less space.

Until this past year (2025), we were very space limited. We would FREEZE any meat we wanted to take along so it kept for days in a cooler (and it acted as ice). In the beginning days of travel, we would eat like kings.

The rest of the trip we would eat freeze dried meals, pastas, cheeses, basically any and all things which did NOT need to be kept super cold.

For any upcoming trips (since the trailer came home) I am not sure what route we will take. I suspect we will follow the same methods BUT I might invest in a bigger cooler so we can carry more ice blocks which will translate into more frozen meats.

On trail breaks, we all just tend to do cheese and crackers, fruits, veggies, peanut butter, bagels...things which are ready to eat.

totally depends on the length of trail ride....day ride just easy cooler stuff.. in November we literally had fresh made california rolls every day for lunch. the guy at the Village market made them fresh for us every morning...totally cool guy...on longer trips will bring my blackstone grill and arb50 but I prefer simpler food choices for day stuff.. so far have never starved to death....
If you have to have a hot meal bring aluminum foil and wrap burritos, pizza, hot dogs etc in the foil and throw it on your engine while you drive....have done that for years...

Jesus ... I was thinking I was going to be fancy with powder eggs and canned corned beef hash. That puts me to shame lol

... I'll have to find a way to top that ... boy do I have my work cut out ...

We bought this awhile back (Walmart $150) and I can say, it's great for two people. Would probably work for a family of four even. Can run off of the small bottles or use an adapter hose to run off of regular BBQ sized bottles. Ie ran it both ways and don't notice any difference in performance.

Sometimes it's easy, bagged salads, cook some chicken and toss on top. Wife loves avocado toast on the griddle.
You can make it as easy or complex as you want. Time does come into play.
