Thanks everyone, I've concluded that a ceramic coating is worth trying.
Keep in mind that what I'm going for here isn't a showroom perfect mirror finish, that's way too ambitious. The paint is going to take abuse all through a 6 month winter and get "Jeep dirty" during the summer. There's just no avoiding it, there is very limited opportunity for maintenance in winter. My goal is to have paint in fairly decent condition years down the line that isn't obviously neglected and abused. It's about survival not perfection. Besides, it's a Jeep. It can't be TOO pretty.
I'm going to try AvalonKing Armor Shield IX, maintained with wipedowns of fresh snow and a wash on the rare occasions that's possible. That's the best I can do. From what I can tell, only a ceramic coating has a chance of protecting paint through all of that. Fluid Film for the undercarriage.
