Just had the Evo pro kit installed. Long arms and Kings. Minimum height for the kit is 3.5” but the shop is insisting that if I set it under 4.5 the coils will pull out too far and bind up at full flex. Hoping to hear from someone that has the same kit installed.

If the shop set up your coilovers with the correct amount of preload (usually 1-2 inches), then that is the "correct" ride height for your setup, whether it's 3.5" or 4.5" or 6" higher than stock.

If you want it lower, there is a right way and a wrong way to go about doing that. The wrong way would be to back off the preload and use a helper spring to keep the coils seated at full droop. The right way would be to replace the coils with softer rates while still maintaining the correct preload.

The manufacturer will have experience with the same kit installed. Call them. Better yet, call them with the installer so he can discuss his opinion.
