I have a Sport S. It came will all terrain tyres and performs well on road and off road. The placard on the Jeep says that the correct tyre pressure is 36psi

If I change to a different tyre, how do I determine the correct tyre pressure?

I believe the new tire will have manufactures recommended pressure. But should not change much unless going with larger tires.

My plan is to choose a tyre with almost exactly the same circumference as the stock tyre.

The door placard refers to recommended pressure for ideal performance and comfort for the stock tires. If you change that it goes out the window.

Since you're choosing a very similar tire, the manufacturer recommended pressure is probably still good. You can use that and adjust as needed. If your ride is too firm lower the pressure a bit. If your tires are wearing unevenly raise/lower pressure as needed. If fuel economy is bad you can raise the pressure. Just don't go above the max pressure listed on the tire and don't go so low that you'll debead the tire.
