I’ve been smoking on Traeger’s for the last 10 years and love the transition to using pellets. Upgrade to a wifi unit that lets me sleep through smoking 20lb briskets.

The pellet smokers are great.
We use our Traeger all year , even in cold winters here.
5 hour St Louis ribs and beans yesterday.

last night's cook:

pork butt, 48h dry marinade in seasoned salt, black pepper, brown sugar.

Started 6:15am @ 225, done exactly 12 hours later.

Wrapped at 160F with peach paper.

You didn't pull it out of the smoker at 160F, did you? That's right when the magic starts to happen with the stall. How high did you take the IT?

I did, only to wrap it in peach paper.

IT was 201/203 on both my probes, about 6 hours after wrapping it.
