Can you do it from an alt of 20’? And set a target distance of maybe 30?

Yes. You orient the drone where you want and then select the subject to follow. I'm still getting used to it and didn't want it too low and possibly hit a cactus or something.

It can also do side profile footage

It wouldnt hit a cactus. It has collision avoidance and a bunch of sensors.
The Mavic MINI however is much lower cost, is smaller (249g) and has all the same features EXCEPT collision avoidance so it risks hitting a cactus but your Air should be good.

That's so cool. I can imagine in the future, police can just tag a suspect's car, then task a smart drone to follow it around.

The collision avoidance system is not foolproof. And even if the drone doesn't actually hit something, it will most likely lose it's target and be unable to reaquire. IMO giving the drone a little fudge factor height is the way to go. YMMV

Have the same drone and love it. Hate the charger setup, super clunky when compared to the mavic mini. That thing is pretty sweet for the cost.
