I have a Dometic CFX3 35, mounted on their slider, very secure and beefy (pardon the pun).

How are y'all keeping your food/beverages from bouncing around in your fridge?

I learned the hard way to avoid carbonated beverages and glass bottles. :)

Do y'all use something to take up the empty space, to keep things from going bouncy bouncy?

Never had an issue, but I try to make sure there is enough stuff in the bottom to keep things from sliding around. I stop and consume ice cold ummmm carbonated beverages pretty regularly after we finish driving.

We don't usually carry a lot of glass, a lot of places don't allow it.

LOL ok so I’ll avoid glass and maybe not carbonated beverages. :)
